The boyfriend makes a mean blueberry pancake. So on weekends when we feel like a treat for breakfast, he whips up a batch of pancake batter with berries thrown in. We drown the pancakes in puddles of maple syrup accompanied by salty fried bacon. A cafetiere of hot coffee for him and a pot of hot tea for me and we are so ready to tuck in.
That is a summer light streaming in, which is what I really need right now instead of all these foggy days of winter.
I realised something significant the other day. Maple syrup is like the western version of palm sugar/jaggery! This revelation occurred while I was brining the chicken for Christmas which called for 4 tbsps of maple syrup in the brining mixture. I felt really bad using so much maple syrup for something I would eventually throw away (plus it doesn’t come cheap) so used 2 tbsps of maple syrup and topped it up with grated palm sugar. Worked a treat.
